Is there anything in particular to look out for when reshafting a putter and what could go wrong?

wrong shaft tip size...make sure to check what you have matches what you need.

Yeah the tip size is good. Is there any way that the person installing the shaft can mess up the alignment, loft, lie and so on or is it a fairly simple process?

For a straight shafted putter, no issues other than tip size.

For a bent-shaft, yes, there are significant issues with the correct shaft design, offset, installation alignment, etc.
